1 pkg. DOLE® All Natural Light Caesar Kit
1/2 pound pre-cooked salad shrimp
1 tablespoon fresh lime juice
1 avocado, halved, cut into 1/2-inch cubes
1/4 cup fine chopped red onion
8 strawberry tomatoes, quartered or 1/2 cup diced tomatoes
1/2 to 1 teaspoon minced jalapeno
2 tablespoons chopped cilantro
Salt and black pepper, to taste
4 large wraps, any variety or use large flour tortillas (10-inches)
• Toss shrimp with lime juice, let stand for 2 to 3 minutes. Add avocado, onion, tomatoes, chili, and cilantro, and gently mix to combine. Season with salt and pepper.
• Combine contents of salad bag in large bowl. Add dressing; gently toss to evenly coat.
• Warm wraps in an ungreased skillet over medium heat until soft and pliable, 15 seconds each side.
• Divide shrimp mixture between wraps, arranging across the center. Top each with one-fourth dressed salad greens. Fold wraps as you would a burrito, tucking in the ends first, and then rolling.
